Mail that you can validate came from where it purports to from organizations with money to lose are the one place you SHOULD use the unsub option. If they're complying with the other sections of CAN-SPAM (and opt-out is, sadly, acceptable under CAN-SPAM) they'll comply with that... unless they want to be fined.
